RAW BUCKWHEAT HONEYProudly harvested by hand during the months of August and September from the hives of Polish fields and native forests. Unpasteurised, unheated, unfiltered, single origin. Unheated, Unpasteurised, Unfiltered, Unprocessed, Unblended(single harvest) Buckwheat honey has a higher concentration of protein, minerals and natural acids, than other comparable honeys. It also contains less water and is a powerhouse of antioxidants. The deep and rich quantity of flavonoids and other phenol compounds are the source of such beneficial antioxidants, which fight off the free radicals. Whilst other foodstuffs contain high amounts of antioxidants, such as tomatoes and other fruit and vegetables, they do not compare with the levels found in buckwheat honey.The most important thing is that the buckwheat honey is raw. Any processing or pasteurisation can cause the honey to destroy all of these valuable compounds, negating the health and nutrition benefits. RUNNY OR CRYSTALLISED? AS YOU WISH! This authentic honey crystallises weeks or months after harvest. How quickly it crystallises and how hard it becomes depends on the ratio of glucose-v-fructose and maturity of the harvest. Should you wish to reinstate it to its original, runny condition, simply put the jar on a radiator overnight or through a dishwasher cycle. In case of the latter method, please make sure that the jar is sealed tightly and that the wash cycle (up to 44°C), in order to maintain the honey's enzymatic and nutritional value.
